You may not know this about me (or maybe it's apparent from my recipes) but I'm the laziest cook ever. That's actually one of the reasons I heart raw food so much; mainly you just throw things into a blender or food processor and then you're done!
Well I found this great bean burger recipe from HelloVeggie that's super easy to make. I added in chopped onions and garlic, and would also like to try it with jalapeno (but currently I'm hoarding my two peppers for a raw corn chip I am formulating - currently in the conceptual phase, but coming soon!). I also am far too lazy to "mash" anything, so I just threw the ingredients into my trusty food processor and "pulsed" like I'd never pulsed before!
These burgers were delicious! And cheap! Which makes me happy because the boy's done work for the season and with my having the flu I missed a bunch of work and we're moving and have to buy stuff for that, so I'm feeling poor.
I served with tomatoes and baby spinach to really benefit from all the delicious iron in this meal. I also added olives because, well, everything should be served with olives. I cooked a bit longer than the original recipe says; I was skeptical as first because it seemed like it was still all soft inside, but it turned out ok.
to make
1 can black beans, well rinsed!!
2 cups brown rice, cooked
small yellow onion, diced
2-3 cloves garlic , minced
jalapeno pepper, seeded and diced (optional)
cayenne pepper
salt
throw everything into a food processor and pulse until well mixed and until the rice and beans are somewhat blended and mashed (but not totally - you want bits of bean).
Form patties. Heat some oil in a pan (to help with sticking) and put patties in pan. Cook about 5-7 minutes one side (until browned) and then flip and cook 5 min on other side.
