noodle bowl! noodle bowl! noodle bowl!
Lately whenever I go to sushi places, all I want is a noodle bowl. My father in law always gets one and I look on in envy while he eats all the noodle bowl-deliciousness. Sadly noodle bowls are made with udon or soba noodles, both very full of gluten and thus very not for selenes.
There was one chinese restaurant that made one with rice noodles, but it was not so great and its veganess, as with most dishes in most chinese restaurants, was questionable.
So I made my own! And my god was it delicious and everything I dream of a noodle bowl being.

To make
(4 servings)
snowpeas, julienned
carrots, julienned
baby bok choy, shredded
napa cabbage, shredded
enoki mushrooms
brown vermicelli rice noodles
tofu, cut in sticks
garlic
soup base
veggie broth, just over 2L (or 900mL broth and 4c water)
water, to cut the broth a bit (I used about a cup)
black pepper, to taste
hot sauce, to taste
sesame oil, 1T
soy sauce, reduced sodium, 1-2T
2T grated ginger
saute the tofu with the garlic in a bit of sesame oil
mix the soup base together in a pot and simmer about 5 min, add the rice noodles and simmer until they're cooked.
wash the rest of the veggies and then steam lightly until just tender enough to easily bite, but so that there's still a bit of crunch left in the carrots and snow peas.
Put the base with noodles in a bowl and then pile the rest of the veggies and tofu on top! There you go! A delicious, warm bowl of noodle-wonderfulness with tons of veggies!!!
sidenote: ew ew ew we got a pack of like 10 bok choy or something and when I started washing them, I noticed there were little caterpillar/worm things like ALL OVER THEM. Which, if this had been in say my garden or something I would be fine with. Particularly as they were kinda cool, how they spit out slime so they could hold on to the stupid bok choy no matter how hard you tried to wash them off...But in my kitchen as I was cooking??? not so fine.
