A beautiful life and raw cauliflower tabouleh

I only really discovered my love for cauliflower a few short years ago. So I'm making up for lost time and trying to find as many ways to enjoy it as possible. At the Sunday market last week, among the 20 mangos we bought (yep. note that a week later, they're all gone), we also scored one awesomely huge cauliflower. One of the first things I made was a raw tabbouleh.

Using cauliflower as a grain replacement is super easy and amazingly delicious. Simply chop the cauliflower up and then throw it in a food processor and pulse it until it's in super small pieces.

2 tomatoes, chopped
1 avocado, chopped
1/2 cucumber, chopped
1 medium carrot, julienned
1/2 red onion, diced
Coriander, chopped
3 cloves, garlic, minced
the juice from 3 limes
Chilli pepper flakes, to taste

Mix all the ingredients together in a large bowl. Add a generous sprinkle of pumpkin seeds and enjoy right away or let it sit for a couple of hours to overnight for the best flavour (the flavours and the dressing will mix nicely and marinate the cauliflower).

Raw tahini is delightfully easy, and inexpensive, to make. And you can do such awesome things with it! I personally love using tahini as salad dressing. And when I discovered you could make a delicious cheese sauce with it...!! Don't forget to update your bookmarks!   Hearty bowl of raw chili Ok, it's been a great great weekend for many reasons: went to an amazing clothing swap put on by V. A. S. T. , went to my adorable niece's birthday party, attended a wonderful raw potluck (yum!!), and went to my uncle and dad's joint bday lunch at my uncle's place. And to make everything even better, there were amazing people and conversations throughout it all! So that part has been great. Of course, all the family get togethers mean that I haven't been eating as raw as I normally do. And I'm really noticing how much better my body does when I'm eating mostly raw. I feel much more grossly full and sluggish on cooked foods. And my throat is burning as it's giving me some serious acid reflux issues. I've also been on this stupid cleanse (I bought it a long time ago and figured I had be
